      目的 研究超高压保鲜包装技术的保鲜机理、 现状和未来的发展方向。 方法 超高压技术( UHPP) 是一种新型的非热加工技术,它主要通过破坏微生物的细胞壁、细胞膜及细胞间隙的结构,使蛋白质等成分发生变性,使酶活性降低来达到杀菌的目的。 从超高压技术在水产品工业、肉制品工业及果蔬、其制品工业等方面,阐述了超高压杀菌技术的应用现状及进展。 结论 超高压保鲜包装技术还处于起步阶段,目前的研究主要集中在技术工艺方面,对于保鲜机理的研究相对较少。 随着对超高压保鲜包装技术研究的不断深入,关于其相关机理的研究会越来越深入。
英文摘要:
      Objective To study the preservation mechanism, the current research status and future research directions of ultra high pressure fresh-keeping packaging technology. Methods Ultra high pressure processing ( UHPP) is a new type of non thermal processing technology used to achieve the purpose of sterilization mainly through destruction of the cell wall structure, cell membrane and intercellular space of the microorganisms, denaturation of proteins, as well as decreasing the enzyme activity. This article illustrated the application and development of ultra high pressure sterilization technology in aquatic product industry, meat industry and the vegetable and fruit products industry and other aspects. Conclusion Ultra high pressure fresh keeping packaging technology is still in its infancy, the present study also focused on the aspect of technique, so far there is relatively little research on the mechanism of preservation. With the development of researching on ultra high pressure fresh keeping packaging technology, there will be more and more deep study on the related mechanism.
