航天食品包装色彩对味觉感知影响研究

摘要

目的 探究不同色彩的食品包装对航天员味觉感知的影响。方法 60名受试者被平均分为两组,均使用主观评测法品尝并评测不同色彩杯子中的甜味和酸味溶液,使用李克特7分制量表对溶液味道进行打分。此外,为模拟微重力环境对航天员的生理影响情况,使一组受试者进行头低位卧床休息,另一组为正常状态,比较两组评分以探讨航天状态对味觉的影响。结果 实验结果表明,头低位、性别和味道均对味觉感知有影响,但头低位的影响不显著。评测甜味溶液时,红色(男性=4.93,女性=5.60)和橙色(男性=5.07,女性=5.60)分值均较高;评测酸味溶液时,黄色(男性=4.93,女性=6.07)和绿色(男性=5.00,女性=5.60)的溶液评分显著较高。结论 头低位对味觉感知的影响在长期飞行中可能更明显;性别对味觉感知有一定影响,但不同色彩对味觉感知的影响趋势在男女之间基本一致。色彩对口味的影响具有规律性:红色和橙色与甜味相关,黄色和绿色与酸味相关。这一规律不受性别和航天环境因素的影响。基于实验结果进行的航天食品包装设计和评估验证了其可行性和有效性。本研究为未来的航天食品包装设计提供了理论和方法指导,并为激发航天员及其他长期处于封闭环境中的人员的味觉感知提供了参考。

Abstract

The work aims to investigate the impact of different food packaging colors on astronauts' taste perception. Sixty subjects were equally divided into two groups, all of whom tasted and evaluated sweet and sour solutions in cups of different colors with a subjective assessment method, and scored the taste of the solutions through a 7-point Likert scale. In addition, in order to simulate the physiological effects of microgravity on astronauts, one group of subjects was placed in a head-down bed rest position and the other group was placed in a normal state, and the scores of the two groups were compared in order to investigate the effects of space status on taste perception. The results showed that head-down position, gender, and taste type all affected taste perception, although the impact of the head-down position was not significant. For evaluation of sweet solutions, the ratings for red (male = 4.93, female = 5.60) and orange (male = 5.07, female = 5.60) cups were higher. For sour solutions, the ratings for yellow (male = 4.93, female = 6.07) and green (male = 5.00, female = 5.60) cups were significantly higher. The head-down position may have a more pronounced effect on taste perception during long-term space missions. Gender has some effect on taste perception. However, the trend of color impact on taste perception is generally consistent between men and women. There is regularity in the effect of color on taste: red and orange are more associated with sweet tastes, while yellow and green are more associated with sour tastes. This pattern is unaffected by gender and simulated space conditions. The design and evaluation of space food packaging based on the experimental results verify the feasibility and effectiveness. This research provides theoretical and methodological guidance for future space food packaging design and offers insights into enhancing taste perception for astronauts and individuals in similar confined environments.
